Asafoetida

Asafoetida, also known as hing, is used like garlic in some Indian cuisines.

Asafoetida is a dried sticky resin scrapped from the root of several species of Ferula, a perennial herb native to the deserts of Iran and mountains of Afghanistan. Asafoetida, also known as hing, and is used in Indian cooking, and is commonly used in a manner similar to minced garlic among those of the Jain faith.
